A2 vs A1 Milk: What's the Difference?

If you've shopped for milk lately, you've probably seen "A2" on the label. It's one of the most misunderstood words in the dairy aisle. Here's the plain-English version of what it means — and why buffalo milk sidesteps the whole debate.

It all comes down to one protein

About 80% of the protein in milk is casein, and the main type is beta-casein. Beta-casein comes in two common forms: A1 and A2. They differ by a single amino acid — position 67 in the protein chain. That one tiny difference changes how the protein breaks down during digestion.

When A1 beta-casein is digested, it releases a peptide called BCM-7 (beta-casomorphin-7). Many people report that milk high in A1 leaves them bloated or uncomfortable, and a good deal of research has focused on BCM-7 as the likely reason. A2 beta-casein does not release BCM-7 in the same way, which is why A2 milk is often described as "easier on the gut".

Roughly 1 in 3 people who feel uncomfortable after regular milk are not actually lactose intolerant — they may simply be reacting to A1 protein, not the sugar.

Where does the milk come from?

Most modern crossbred and exotic dairy cows (like Holstein Friesians) produce a mix of A1 and A2 protein. Native Indian desi cows and — importantly — buffaloes produce milk that is naturally A2.

Buffalo milk is naturally 100% A2

This is the part most labels won't tell you: you don't need a special "A2 cow" to get A2 milk. Buffalo milk is naturally free of A1 beta-casein. It's A2 by default. That's one reason buffalo milk has been the traditional milk of choice across North India for generations — richer, creamier, and gentler on the stomach.

How to spot genuine A2 milk

  • Know the source animal. Buffalo milk and desi-cow milk are naturally A2. Generic "cow milk" usually isn't.
  • Look for single-farm origin. Pooled milk from many farms can't guarantee what you're getting.
  • Avoid over-processing. Un-homogenised, gently pasteurised milk keeps its natural structure and cream.
  • Check the packaging. Glass protects flavour and avoids the plastic taint of pouch milk.
